Yelena Caputo has worked with hundreds of retailers around the world at her distribution company, A Priori. Sander Wolf has bought a lot of the chocolate she distributes.

About the Presenters

Sander WolfSander Wolf: 
Sander Wolf began what would become the Dallas Chocolate Festival in 2009. First showcasing a dozen or so chocolate artisans, it is now an event that draws thousands of attendees and has become one of the most respected chocolate festivals in the country. He is also on the board of the Fine Chocolate Industry Association and other non-profits. Somewhere in there he also started a commercial rental kitchen and a record label. Sander’s degree was handed to him by Sting upon graduating from Berklee College of music. He lives in Plano, TX, with his wife and his son, the future president of the United States.

Yelena Caputo: 
Yelena Caputo, a cheesemonger/retail buyer who became obsessed with craft chocolate and was frustrated by the fact that no distributors in America focused on this important niche, founded A Priori. Now offering much more than just chocolate, A Priori, values specialty foods that exhibit true craftsmanship. With a penchant for Old World style, we seek products made by hand with outlier levels of skill. Quite simply, we know quality. We vet potential new products through rigorous blind tasting, and if the provenance of the ingredients are not excellent we simply won’t carry them.
